Homemade Ceviche: A delicious, easy and healthy meal

On a stressful day, some people will order pizza or Chinese food in a desperate attempt to avoid cooking and wasting valuable time. However, breaking your healthy eating habits may not always be necessary on such occasions. An easy, delicious alternative to Ramen noodles or Stouffer’s Mac and Cheese could be made within half an hour and cost you a fraction of the calories. Ceviche, a Peruvian dish consisting of marinated fish and lettuce, sweet potato, and Peruvian corn is a delicious and flavorful alternative.  You will also be able to impress with this amazing dish. Here’s the recipe we used:

Homemade Peruvian Ceviche by Three Little Forks

CEVICHE

Ingredients:

  • Red hog snapper (or other white fish), cut into 1 inch cubes
  • Half a red onion, sliced
  • Half a white onion, sliced
  • 9-10 limes, squeezed
  • A few bushes, or leaves, of cilantro, minced
  • One clove of garlic, whole
  • Lettuce (optional)
  • Cooked Sweet Potato (optional)
  • Peruvian Corn – Choclo (optional)

Directions:

Mix the cubed raw fish with the next 5 ingredients.  Let marinate for about 30 minutes. Toss out the garlic clove and serve on a bed of lettuce, choclo and garnish with chilled sweet potato slices.  Enjoy!
